Keylime Pie Ice Cream

1 cup granulated sugar
1/2 cup key lime juice
3 large eggs
1 cup whole milk
1 cup heavy cream
1/2 teaspoon vanilla extract
crushed graham crackers
Directions
Place a one quart container in the freezer to chill.
Whisk in lime juice, and milk to combine in saucepan on medium heat.
In a seperate bowl, whisk eggs. Slowly temper eggs into warm lime juice and sugar mixture.
Warm the mixture over medium heat, whisking constantly until steam rises from the pan and it begins to bubble around the edges. (170 on a thermometer).
Using a fine mesh sieve, strain the custard into a one quart spouted measuring cup. Whisk in vanilla and heavy cream. Cover and chill until until the mixture is cold.
Freeze the lime ice cream base according to the instructions of your ice cream mixer. In the last 3 minutes of churning, add in gram cracker crumbs if desired.
Once the ice cream is ready, spoon it into the pre-frozen container. Cover and place the ice cream in the freezer for several hours.
