Korean Cucumber Salad

Ingredients

6 inches cucumber (english or kirby), cut thinly into coins

1/2 shallot, thinly sliced ... or 1-2 green onion sprig, thinly sliced

2 garlic cloves, crushed/minced

1/2 tbsp rice vinegar (or white vinegar)

1/2 tbsp sesame oil

gochugaru, to your liking

sesame seeds, to your liking

Salt

Directions

1. Salt and drain cucumber coins for at least 15 min.

2. Macerate shallots in vinegar for at least 15 min. If using green onion skip this step.

3. Toss all ingredients in a bowl until evenly combined.

4. Serve immediately. If storing, drain before serving.

Notes

Optional: soy sauce, sugar
