High Protein Lime Caesar Chicken Bowl

Ingredients

2 cups cooked jasmine rice

1 can sweet corn

fresh cilantro

chili flakes

black pepper

Crispy Chicken Thighs

What You Need:

1 ½ lbs boneless skinless chicken thighs

1 tbsp olive oil

salt & pepper

garlic powder

onion powder

paprika

Italian seasoning

lime juice

Directions

Dice chicken thighs into small bite-sized pieces and season heavily on all sides. Sear over medium high heat until golden brown with crispy edges or air fry @ 390 for 12-15 min

Lime Caesar Dressing

What You Need:

3/4 cup plain nonfat Greek yogurt

2 tbsp light mayo

juice of 1 lime

2 tbsp grated parmesan

1 garlic clove minced

1 anchovy fillet

1 tsp Dijon mustard

small handful cilantro

salt & pepper

splash of water

Blend until smooth and creamy.

Build The Bowl

Add jasmine rice and sweet corn to the bowl then top with crispy chicken thighs. Drizzle heavily with the lime Caesar dressing and finish with fresh cilantro, chili flakes, black pepper, and fresh lime juice.
