Chicken Curry

1-2 leeks (depending on size)
1 tbsp plain flour
1 tsp madras curry powder
1 tsp crushed chillies
1 tbsp ground turmeric
1 tsp chopped ginger
2 tsp asafoetida powder
2 peppers (ideally yellow and orange but not a dealbreaker)
2 sticks of celery
Pint of veg or chicken stock
Leftover roast chicken or chicken thighs
Directions
1. Chop the leeks up small and fry til softening
2. Chop the chicken and add to the pan to brown
2. Mix together all the spices, powders and flour in a bowl
3. Chop and add the peppers and celery to the leeks and fry for 5 mins
4. Add in the spice mixture
5. Add in the stock and let cook together
If using leftover roast chicken ignore step 2, and add in chick after stock/spices cooked together for a bit
