Pulled Pork Sweet Potato Hash

Ingredients

1-1/2 pounds of sweet potatoes (diced)

1/2 onion, diced

8-12 ounces cooked pulled pork (about 2 cups)

2 tablespoons butter or oil

Optional: 4-6 eggs

Optional: cilantro (coriander), steak sauce, barbecue sauce, pork rub, etc.

Directions

1. Peel and chop sweet potatoes into bite-size pieces (about 1/2 inch cubes).

2. Heat 10” non-stick skillet on medium-high with butter or oil. Cook sweet potatoes in skillet until they turn soft and a brighter orange, stirring occasionally. About 30 minutes. Lower the temperature to medium, add onion and pork and any optional sauces or spices, and continue to cook until the onion is translucent. About 10 minutes.

3. If adding the eggs, turn burner to medium-low. Carefully crack the eggs across the surface, avoiding letting them touch the side of the pan. Cover and cook until the eggs are set. Wiggle the pan to test the doneness of the egg whites. About 15-20 minutes.

4. Just before serving, sprinkle with fresh cilantro.

Notes

Throw in some crushed walnuts?

Pork rub:

2 tablespoons chili powder

1 teaspoon paprika

1 teaspoon salt

1/2 cup brown sugar

1/2 teaspoon cumin

1/2 teaspoon turmeric

1/4 teaspoon black pepper
