Mediterranean Pickled Cucumber, Onion & Bell Pepper Salad

Ingredients

2 large cucumbers, thinly sliced

1 medium red onion, thinly sliced

1 red bell pepper, thinly sliced

1 yellow bell pepper (optional, for color), thinly sliced

1/2 cup white vinegar or apple cider vinegar

1/4 cup olive oil

1 tbsp lemon juice

1 tbsp honey or maple syrup

1 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1–2 garlic cloves, minced

2 tbsp fresh parsley, chopped

Directions

In a large bowl, combine sliced cucumbers, onions, and bell peppers.

In a separate bowl, whisk together vinegar, olive oil, lemon juice, honey, salt, pepper, oregano, and garlic.

Pour the dressing over the vegetables and toss well to coat everything evenly.

Cover and refrigerate for at least 1–2 hours (overnight gives the best flavor).

Before serving, sprinkle fresh parsley on top and give it a quick toss.

Tips:

The longer it sits, the more flavorful and slightly pickled it becomes.

Add feta cheese or olives for a more authentic Mediterranean twist.

Keeps well in the fridge for up to 3–4 days.
