Creamy Chickpea Salad
14oz can Chickpeas, drained and rinsed
1/3 c. Mayo (I use @chosenfoods avocado mayo)
1 Scallion, rough chop
1 Clove garlic
1 small cucumber, rough chop
1 tsp dijon Mustard
1 tsp apple cider vinegar
1-2 tbsp pepperoncini (to your liking)
Pinch Salt
Pinch Pepper
Directions
Add all ingredients to a food processor and pulse a few times to get everything combined and chopped. Be careful not to puree.
Add to your favorite sandwich or scoop with crackers!
