6 Tablespoons extra virgin olive oil (good quality)

1 1/2 Tablespoons champagne vinegar

2 teaspoons Dijon mustard

1 clove garlic, minced finely

1 Tablespoon honey

1/4 teaspoon kosher salt

1/8 teaspoon freshly ground black pepper

Salad

Leftover roast chicken breast

Leftover grilled or roast corn

8 oz goat cheese

5 oz Spring Salad mix

1/4 cup dried cranberries or cherries

3/4 pint (over 1 cup) cherry tomatoes, cut in half

2 cups croutons

1/2 cup pine nuts (or pecans)

1/4 dried figs or dates, sliced (optional)
