Fish And Sweet Potatoes

Ingredients

1–2 sweet potatoes (cubed or wedges)

1–2 cups broccoli florets

1 fillet white fish (cod, tilapia, haddock) or salmon

Olive oil

Garlic powder + black pepper

Optional: smoked paprika, chili flakes

Lemon slices (for roasting + squeeze after)

Parm or MontAmoré (optional)

Directions

Preheat oven to 400°F.

Toss sweet potato in olive oil + garlic powder + paprika. Spread on sheet.

Roast 20 min.

Add broccoli (tossed in olive oil + pepper) + fish to sheet.

Drizzle fish with olive oil, season with garlic powder + pepper.

Add lemon slices on top of fish.

Roast another 12–15 min (fish flakes easily, veggies golden).

Finish with fresh lemon squeeze + optional cheese sprinkle.

Serve straight from the sheet like a boss.
