Crockpot Beef Tips and Noodles

2 lbs beef stew meat or chuck roast, cut into bite-sized cubes
1 tablespoon olive oil
1 medium yellow onion, diced
2 cups beef broth
1 (10.5 oz) can cream of mushroom soup
1 packet (1 oz) onion soup mix
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 tablespoon cornstarch + 2 tablespoons cold water (optional, to thicken)
12 oz egg noodles
2 tablespoons butter (for noodles)
Optional: chopped parsley for garnish
Directions
In a large skillet, heat olive oil over medium-high heat. Sear the beef tips for 2–3 minutes on each side until browned (you may need to do this in batches). This adds flavor, but you can skip this step if short on time.
Add the browned beef to the crockpot.
Top with diced onion, beef broth, cream of mushroom soup, onion soup mix, Worcestershire sauce, garlic powder, and black pepper. Stir gently to combine.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is fork-tender.
If you'd like a thicker gravy, mix the cornstarch and cold water in a small bowl, then stir it into the crockpot during the last 30 minutes of cooking.
Cook egg noodles according to package instructions. Drain, then toss with butter.
Serve the beef tips and gravy over the buttered noodles. Garnish with chopped parsley if desired.
