Hot Honey Salmon Bites W Charred Pineapple Salsa

Ingredients

Hot Honey Salmon Bites with Charred Pineapple Salsa 💃 over coconut rice!! Gimme all the tropical vibes:)

For the salmon:

1 lb of salmon with skin removed

2 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Pinch of cayenne

S&P

1 tbsp olive oil

1 tbsp hot honey

Squeeze of lime juice

Charred pineapple salsa:

1 1/2 cup pineapple cubed

1 red bell pepper finely diced

2 green onions sliced

1 small Serrano or jalapeno finely chopped

1/4 cup mint chopped

1/4 cup cilantro chopped

1/2 tsp salt

1 lime juiced

Drizzle of sesame oil or olive oil

Coconut rice:

1 cup Jasmine rice rinsed

1 tsp olive oil

1 cup full-fat coconut milk

1 cup water

1/2 tsp salt

Cut the salmon into cubes & add to a bowl with spices & hot honey. Combine together & set aside.. preheat airfryer to 400 & diced pineapple into cubes. Add to the airfryer & cook on both sides for 10-15 min turning halfway until the pineapple is charred. Meanwhile add all of the salsa ingredients to a bowl & add the charred pineapple, mix well. Add the salmon in the airfryer at 400 degrees & cook 15 min turning halfway. Once salmon is done squeeze some lime juice on top.

Immediately serve with the coconut rice, Furikake seasoning, cooked salmon bites, a few spoonfuls of the salsa, sliced avocado, squeeze of lime & a drizzle of additional hot honey.
