Ingredients

4 cups/960 ml water

2 Tbsp Assam or Darjeeling tea leaves

2 Tbsp ground chai masala (plus optional smashed piece of ginger root)

1 cup/240 ml milk - or milk alternative

Sugar to taste (or honey or sugar free syrup)

Directions

Add the water to a small saucepan. Add the tea leaves and chai masala bring to boil over high heat.

Reduce the heat to a simmer, cover with a lid and let simmer 5 minutes until liquid turns dark and the spices are fragrant. Uncover, pour in the milk, and bring to a boil. Then stir in sweetener. Strain and serve.
