What youβll need:
8oz Banza pasta
8oz pepperoni
10 oz mini mozzarella balls
15-20 grape tomatoes, sliced in half
2 tbsp fresh basil
topped with freshly cracked pepper + hot honey
For the dressing:
1/2 cup plain Greek yogurt
1 tbsp mayo
1 tbsp olive oil
1 tbsp red wine vinegar
2-3 tbsp tomato paste
2 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 teaspoon crushed red pepper flakes
salt and pepper, to taste
2-3 tbsp grated Parmesan cheese
Directions
Bring a large pot of salted water to a boil. Add the Banza pasta and cook according to package instructions. Drain and rinse with cold water. Set aside.
In a medium bowl, whisk together the Greek yogurt, mayo, olive oil, red wine vinegar, tomato paste, Italian seasoning, garlic powder, onion powder, red pepper flakes, and grated Parmesan. Season with salt and pepper to taste. If the sauce is too thick, add 1 tbsp of water and mix until itβs your desired consistency
In a large bowl, combine the cooled pasta, pepperoni, mozzarella balls, sliced grape tomatoes, and chopped fresh basil.
Pour the dressing over the pasta mixture and toss until everything is evenly coated. Taste and adjust seasoning as needed.
Top with freshly cracked black pepper and a generous drizzle of hot honey just before serving. Serve chilled or at room temperature.
