Greek Salmon Toasted Pita

Ingredients

4 whole-grain pita breads

2 tablespoons olive oil

1/2 cup purchased hummus (desired flavor)

3/4 cup lightly packed fresh baby spinach leaves

1/2 cup fresh basil leaves

2 5-ounce pouches boneless skinless salmon

2/3 cup halved cherry tomatoes

1/4 cup crumbled feta cheese

1/4 cup sliced pitted ripe olives, drained

Directions

Preheat broiler. Arrange pita on a rimmed baking sheet. Lightly brush pita on both sides with olive oil. Broil pita 4 to 5 inches from the heat for 2 to 3 minutes or until lightly toasted, turning once halfway through broiling. Transfer pita to a large cutting board.

Spread tops of pita with hummus. Top evenly with spinach and basil. Top with salmon, tomatoes, feta, and olives. Cut into wedges to serve.
