300 grams chicken thigh (fatty cuts preferred).
1 tbsp honey.
1 tbsp light soy sauce.
1 tbsp oyster sauce.
1 tbsp dark soy sauce (or Kecap Manis).
2 tbsp brown sugar.
2 cloves garlic, pureed or grated.
1 inch ginger, pureed or grated.
1 tsp Chinese Five Spice powder.
Pinch of white pepper.
1 tsp red food coloring (optional).
Directions
Create Marinade
In a bowl or ziplock bag, mix together the honey, light soy sauce, oyster sauce, dark soy sauce, brown sugar, garlic, ginger, Chinese Five Spice powder, white pepper, and red food coloring (if using) to create the marinade.
Marinate Chicken
Add the chicken thighs to the marinade, ensuring they are well-coated, and refrigerate for at least 2 hours, preferably overnight.
Preheat Oven
Remove the chicken from the refrigerator and let it sit at room temperature for 15-20 minutes to take off the chill. Meanwhile, preheat the oven to 200°C (390°F).
Bake Chicken
Lay the marinated chicken on a baking tray and place it in the preheated oven.
Cook Chicken
Bake the chicken for approximately 20 minutes, or until cooked through.
Rest And Serve
Let the chicken rest for 10 minutes before slicing and serving.
