Authentic Cuban Black Beans

14 oz dried black beans
4 cups water
2 bay leaves
1 tsp salt
Wash and rinse dried beans. Pressure cook all the ingredients above for 35 min.
1 medium onion, diced
1 green bell pepper, diced
4 garlic cloves
1 tsp cumin
1 tsp oregano
1/4 cups dry cooking wine
1 tsp tomato sauce or ketchup
1 tbsp white vinegar
2 tsp white sugar
Salt & pepper to taste
Directions
In a separate pan, sauté onion and bell pepper until soften. Add in your spices and garlic. Mix until fragrant. Incorporate the sofrito into your softened/cooked beans. Now add in tomato sauce, vinegar and sugar. Set pressure cooker to sauté and simmer on low for 15-20 or until your desired thickness.
