SALAD:

500g frozen sweetcorn

200g roasted red peppers (from the jar)

4 spring onions

100g pickled jalapeños

100g baby tomatoes

handful of fresh coriander

400g cooked chicken

1tsp smoked paprika

salt & pepper to your liking

SAUCE:

200g cottage cheese

1 lime, juice

1tbsp mexican seasoning

NOTE: I was suppose to add a tin of beans but I completely forgot about them 🤣 so you can add these in for extra fibre and protein!!
