Mediterranean Sheet Pan Chicken & Pepper Roast

Main:* 1.5 lbs chicken breast cut into strips, 2 red bell peppers sliced, 2 green bell peppers sliced, 1 large onion sliced, 3 tbsp extra-virgin olive oil
Spices:* 1 tbsp smoked paprika, 2 tsp dried oregano, 1 ½ tsp garlic powder, 1 tsp cumin, 1 tsp sea salt, ¾ tsp black pepper, ½ tsp chili flakes
Finish:* 2 tbsp lemon juice, 1 tsp lemon zest, 2 tbsp fresh parsley chopped
Directions
Preheat oven to 425°F. Line sheet pan with foil.
Toss chicken, peppers, and onion with olive oil, paprika, oregano, garlic powder, cumin, salt, pepper, and chili flakes until coated.
Spread in single layer on sheet pan. Roast 20-22 min, tossing halfway, until chicken is cooked and vegetables are charred.
Drizzle with lemon juice, sprinkle lemon zest and parsley. Toss and serve hot.
