Ingredients

9 Lasagna Noodles

16oz Sweet Italian Sausage, Ground

60 oz Ricotta Cheese

2 large Eggs

1 cup Fresh Grated Parmesan Cheese

8-10oz Fresh Spinach, Chopped

16oz Shredded Mozzarella Cheese

1 teaspoon Dried Oregano

5 cups Moms Spaghetti Sauce

Directions

1. Preheat oven to 350 degrees.

Prepare lasagna noodles per package directions. Drain and lightly oil each noodle and set aside.

3. In a skillet brown sausage crumbling up using a wooden spoon until no longer pink. Remove and drain on paper towel's. Set aside.

4. In a medium bowl, blend ricotta cheese, egg, ½ cup parmesan, and the chopped spinach. Set aside

5. Spray baking pan with non-stick spray.

6. Place 1 cup of sauce in bottom of baking pan.

7. Top with 3 lasagna noodles. Spread 1/3 of the ricotta cheese mixture and 1/3 of the sausage on the noodles and layer on 1 ½ cups of sauce. Sprinkle ½ cup mozzarella cheese over this. Repeat this process 2 more times, starting with the noodles and with the remaining 1/2 cup of grated parmesan cheese. Sprinkle with oregano.

8. Place in oven and cook 1 hour until hot and bubbly

9. Let stand 10 minutes before cutting.
