Halloumi Ceasar Salad Loaded Sweet Potato

Noooo this is literally a love child of 3 of my fave things: halloumi / chickpeas (specifically @boldbeanco) & sweet potato. So good and a v good way to hard up a saladddd ✨✨🀠🀠

Ingredients - serves 1 πŸ‘©πŸΌπŸ³

1 sweet potato

Garlic granules, smoked paprika, salt, pepper & a tiny bit of cinnamon

1 baby gem lettuce

Handful of chickpeas

1/2 avo

1tbsp caesar dressing

Pecorino cheese

60g halloumi - in chunks

Directions

Preheat the oven to 200 degrees. Slice up your sweet potato & season generously. Pop into the oven for 30 minutes, tossing half way.

Meanwhile, make up your salad with lettuce, avocado, chickpeas and pecorino. Mix up with som dressing and season with black pepper.

Fry off your halloumi until golden brown.

Assemble once your sweet potato chunks are ready and enjoy !! xx
