Pizza Börek (I recommend this recipe for ready-made phyllo dough too 🫠)
Ingredients
Cup Measurement: 200 ml
500 g flour (4 cups)
300 ml water (1.5 cups, slightly more depending on the quality of the flour; it should be neither too soft nor too hard)
10 g salt (1 teaspoon)
2 g powdered yeast (1 teaspoon)
10 g granulated sugar (1 teaspoon)
I used 150 g butter to spread on the phyllo dough. Melt and cool. 🫠
Sauces: Mix 1 tablespoon red pepper paste and 6 tablespoons tomato sauce. Add thyme and black pepper. Add whatever you have on hand or your favorite filling. 🫠
Preparation
Make the dough. Place the flour in a mixing bowl, make a well in the center, add the yeast and sugar, and then add the warm water. Let the yeast activate for 5 minutes. Then, add the salt and knead the dough. Knead (Every flour has a different texture. If it's too hard, you can add another 2 tablespoons of water. The temperature of the water is crucial, so it's neither too hot nor too cold.) Now, cover it (it shouldn't get airy). Let it rest for about half an hour. Then, divide the dough into two pieces, cover them, and let it rest for another 15 minutes. (The dough should be well-rested.)
Now roll out the dough as thin as possible (it doesn't need to be very thin; it will thin out when rolled out again). Apply butter as shown in the video, seal it like an envelope, and let it rest in the refrigerator for about 30 minutes (the butter needs to set).
Take the rested dough and place it on the counter (lightly flour the counter). Roll it out until you have a large square. Add the filling and shape it as shown in the video. Finally, brush with butter. Bake in a preheated oven at 180°C (350°F) until the pomegranate is tender. But it's like a ripe pomegranate. I like mine, but I like it a bit less. I cook it well.
