Hatch Red Chile Sauce (Elote)

Ingredients

1/4 pound ground pork

8 garlic cloves, smashed, peeled, chopped

1.5 cups chopped onion

oil as needed for frying

6 sun-dried Hatch red chiles

1/3 cup hot Hatch red chile powder

4.5 cups chicken stock

2 teaspoons salt

1 teaspoon Maseca

1 Mexican bay laurel leaf, ground

1 teaspoon ground cumin

2teaspoons dried Mexican oregano

a pinch of ground cloves, optional

Directions

Brown the pork, garlic, and onion in the I in a heavy skillet. Add chiles, chile powder, icken stock, and remaining ingredients. nmer very slowly for 20 minutes, stirring m time to time. Purée in a blender and rigerate until ready to use.
