For the Shrimp:
1 lb large shrimp, peeled & deveined
1 tsp smoked paprika
½ tsp garlic powder
½ tsp dried oregano
¼ tsp cayenne pepper (optional for heat)
Salt & black pepper to taste
1 tsp olive oil
For the Sauce:
1 tbsp unsalted butter
3–4 cloves garlic, minced
½ tsp crushed red pepper flakes
⅓ cup sun-dried tomatoes (julienned, oil-drained)
½ cup chicken broth (or veggie broth)
½ cup light cream
¼ cup grated parmesan
Fresh parsley (for garnish)
Directions
In a bowl, toss shrimp with smoked paprika, garlic powder, oregano, cayenne, salt, black pepper, and 1 tsp olive oil.
Heat a large skillet over medium-high heat. Sear shrimp 1–2 minutes per side until pink and slightly crisp. Remove and set aside.
Lower heat to medium. Add 1 tbsp butter to the same skillet. Sauté minced garlic and red pepper flakes for 30 seconds until fragrant.
Stir in sun-dried tomatoes and broth. Simmer for 2 minutes to reduce slightly.
Stir in cream and parmesan. Simmer 2–3 minutes until thickened.
Return the shrimp to the skillet. Spoon sauce over them and simmer 1–2 more minutes so the flavors combine.
Top with chopped parsley and serve over pasta, rice, quinoa, or zucchini noodles for a healthy base.
