1 lb ground turkey (lean or extra lean)
1 medium onion (diced)
2 cloves garlic (minced)
8 oz mushrooms (sliced)
1 cup beef broth
1 cup sour cream (full fat or light)
2 tbsp all-purpose flour
2 tbsp olive oil
1 tsp paprika
½ tsp salt (to taste)
½ tsp black pepper (to taste)
12 oz egg noodles (or rice, cooked)
2 tbsp fresh parsley (chopped, for garnish)
Directions
Preparation Steps
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
Add sliced mushrooms to the skillet and cook until they are lightly browned.
Add ground turkey to the skillet, cooking until it is browned and cooked through. Drain any excess fat.
Sprinkle paprika, salt, and black pepper over the turkey mixture. Stir in flour until well combined.
Slowly pour in the beef broth, stirring constantly to avoid lumps. Simmer for 5 minutes to thicken.
Stir in the sour cream and mix until heated through. Do not let it boil.
Serve the stroganoff over cooked egg noodles or rice, garnished with chopped parsley.
