Chicken Chow Mein

1 lb chicken breast, thinly sliced
12 oz chow mein noodles (or thin spaghetti)
2 tablespoons vegetable oil
2 cups shredded cabbage
1 carrot, julienned
1 bell pepper, sliced
3 green onions, chopped
3 cloves garlic, minced
For the Sauce:
¼ cup low-sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 tablespoon brown sugar
1 teaspoon sesame oil
½ cup chicken broth
1 tablespoon cornstarch (mixed with 2 tbsp water)
Directions
Cook noodles according to package directions, drain, and set aside.
In a small bowl, whisk together all sauce ingredients.
Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
In the same skillet, add garlic, cabbage, carrot, and bell pepper. Stir-fry 3–4 minutes until tender-crisp.
Return chicken to the pan, add noodles, and pour in the sauce.
Toss everything together and cook another 2–3 minutes until coated and glossy.
Garnish with green onions and serve hot.
