Ingredients

  • Olive Oil 1 tbsp

  • Unsalted Butter 1 tbsp

  • Salmon Fillet 0.75 lbs

  • Salt 1 tsp

  • Black Pepper 0.5 tsp

  • Garlic 2 cloves

  • Cherry Tomatoes 150g

  • Baby Spinach 2 handfuls

  • Heavy Cream 120mL

  • Parmesan Cheese 30g

  • Parsley

Directions

  1. Season fillets with salt and pepper

  2. Stove on medium. Add butter and olive oil. Fry salmon until crispy and caramelized.

  3. Finely slice garlic

  4. Transfer salmon to plate once done.

  5. Cook garlic in same pan.

  6. Add halved cherry tomatoes

  7. Season with salt and pepper, keep cooking

  8. Add spinach and cook till wilted (~2 min)

  9. Pour heavy cream and grate cheese

  10. Add herbs and let pan simmer for ~1 min

  11. Return the salmon to the pan

  12. Let simmer for 2-3 more minutes, after covering in the sauce
