Ingredients

Lots of eggs

Fresh Parmesan

Pecorino Romano

Fresh black pepper

Pacettta, Gunacale, or bacon

Fettuccine

Peas

Salt

Directions

  1. Boil pasta in heavily salted water

  2. Cook diced pancetta

  3. Cook peas

  4. Strain pasta and let cool to a temp that won’t cook the egg sauce. Save some pasta water when straining

Prep Sauce

  • Egg yokes (TODO: consider whites)

  • Freshly grated Parmesan

  • Pecorino Romano

  • Black pepper

  • Salt

  • Peas

  • Cooked Pancetta + grease

  • Pasta water (let cool slightly before adding)

5. Add sauce to pot and eat
