Pineapple Chicken & Rice

Ingredients

Chicken:

1 lb chicken breast or thigh thinly sliced

1 cup flour for coating

Salt and pepper to taste

Pineapple Ginger Sauce:

1 cup fresh pineapple chunks or canned

1/2 cup pineapple juice

1/4 cup soy sauce

2 tablespoons brown sugar or honey

1 tablespoon grated ginger

2 cloves garlic minced

1 tablespoon cornstarch dissolved in 2 tablespoons water

Rice:

2 cups white or brown rice cooked according to package instructions

Garnish (optional):

Sesame seeds

Sliced green onions

Fresh cilantro leaves

Directions

Prepare the Chicken: Season chicken pieces with salt and pepper, then dredge in flour. Heat oil in a skillet over medium-high heat and cook chicken until golden and cooked through. Set aside.

Make the Sauce: In the same skillet, add a bit more oil and sauté ginger and garlic until fragrant. Add pineapple juice, soy sauce, brown sugar/honey, and bring to a simmer. Add pineapple chunks. Stir in cornstarch mixture until the sauce thickens.

Combine: Return the chicken to the skillet, coating it well with the sauce. Let simmer for a few minutes.

Serve: Plate the cooked rice, top with pineapple chicken, and garnish with sesame seeds, green onions, and cilantro if desired.
