Enchilada Pie

1 Ib. ground beef or turkey, shredded chicken, or carnitas (I've used the frozen ones from Costco), or don't use meat
1 onion, diced
1 Ib. shredded cheese (I don't use this full amount and sharp cheddar makes it really good)
1 can cream of chicken soup (I use the Healthy Request)
1 can cream of mushroom soup (Healthy Request)
1 small can enchilada sauce
1/2 cup milk
12 white corn tortillas
Directions
1. Preheat oven to 350. Spray 9x13 baking dish with cooking spray. Stack tortillas and cut into wedges like a pie. Set aside.
2. Brown meat (if using) and onion. Add soups, enchilada sauce, and milk. Mix together and bring to a boil. Simmer for 10 minutes.
3. Layer 1/3 of tortillas in the bottom of the baking dish. Pour 1/3 of sauce mixture on top. Sprinkle 1/3 of cheese on sauce. Repeat layers so you have 3 of each, ending with cheese.
4. Cover with foil and bake for 45 minutes. Remove foil and broil last few minutes to get cheese crispy. Serve with Mexican rice and tortilla chips.
