Ingredients

• 7 oz pork tenderloin, trimmed

• 1-1½ cups mixed vegetables (e.g., broccoli, bell peppers, zucchini)

• 1 teaspoon olive oil

• ¼ teaspoon paprika

• 1 clove garlic, minced (or ½ teaspoon garlic powder)

• ¼ teaspoon salt

• ⅛ teaspoon black pepper

• Optional: ¼ teaspoon dried rosemary

DIRECTIONS

Step 1 - Preheat Oven

1. Preheat oven to 425°F (218°C).

2. Line a baking sheet with foil or parchment paper.

Step 2 - Season Pork

1. Pat pork tenderloin dry with a paper towel.

2. Rub pork evenly with olive oil, paprika, garlic, salt, pepper, and optional rosemary. Step 3 - Roast Pork & Veggies

1. Place pork in center of baking sheet.

2. Arrange vegetables around pork.

3. Roast in oven for 18-22 minutes, or until internal temp of pork is 145°F (63°C).

4. Toss veggies halfway through cooking for even roasting.

Step 4 - Rest Pork

1. Remove pork from oven. Let rest 5 minutes before slicing.

2. Serve sliced pork with roasted vegetables.
