Tadka Dal

1/2 cup Mung dal
1/2 cup Masoor dal
3 cups water + more at hand
1 large diced onion
2 tsp turmeric
2 tsp red chilli powder
Block of frozen ginger
4 cloves minced garlic
2 dry red chillis
1 tsp cumin seeds
2 sliced green chillis
4-5 curry leaves
1 tbsp garam masala
4 tbsp chopped coriander
Salt to taste
Ghee (optional)
Directions
Wash your dal thoroughly.
Add the dal, water, ginger, salt, red chilli and turmeric in a pot and cook on a medium flame.
Cook the dal until they begin to soften. You may wish to add more water if necessary to obtain your desired consistency.
Create the tadka by heating some oil and sautéing the cumin, garlic, curry leaves, dry red chillis, green chilli and onions.
Add the tadka to the dal and cook on a low flame for a further 10 minutes to allow the flavours to infuse.
Finally sprinkle over the garam masala and coriander. Add a spoon of ghee to the dhal for a great earthy authentic taste.
This dish is best served with jeera rice, roti and even some spicy achar.
