Chicken and Dumplings

Ingredients

1 whole chicken cut up

3 carrots cut into pieces

2 tablespoons creole seasoning

3 stalks of celery cut into pieces

1 whole sweet onion chopped into pieces

2 tablespoons olive oil

3 cloves garlic chopped

3 cups water

¼ cup chicken better than bouillon

2 sprigs fresh thyme

1 sprig fresh rosemary

2 bay leaves

1 chicken bouillon packet

½ stick butter

1 tablespoon black pepper

2 tablespoons parsley

1/3 cup heavy cream

The Dumplings

1 ½ cup all-purpose flour

1 tablespoon baking powder

1 teaspoon sugar

1/ 2 teaspoon salt

1 teaspoon garlic powder

1 tablespoon dried parsley

2 tablespoons melted butter

½ to ¾ cup milk

Directions

To prepare chicken and dumplings, commence by seasoning the chicken on all sides with Creole seasoning. Next, heat olive oil in a Dutch oven and sear the chicken, skin side down, until browned on all sides. Remove the chicken, then sauté onions, celery, and carrots until tender, followed by garlic for one minute. Return the chicken to the pot, adding water, Better Than Bouillon packet, thyme, and bay leaves. Bring to a boil, then reduce heat and simmer for two hours or until the chicken reaches 165°F. Meanwhile, prepare dumplings by combining flour, baking powder, sugar, salt, garlic powder, parsley, butter, and milk in a bowl. Once the chicken is tender, shred and return it to the pot, discarding bones and skin. Remove bay leaves and thyme stems, then add chicken bouillon packet, butter, pepper, and parsley. Scoop dumplings into the pot, ensuring separation,add in the heavy cream and simmer for 15 minutes or until doubled in size and fluffy.
