Ingredients

Meal prep omelette bowls 🍳

These meal prep omelette bowls are the perfect option if you’re wanting a quick and easy breakfast that is high in protein and volume.

What you’ll need:

2 eggs

100ml egg white

20g spinach

20g red onion

50g capsicum

50g shortcut bacon - primo

15g mozzarella cheese - Woolworths

5ml olive oil

Salt and pepper

Directions

Preheat oven to 180°C.

Crack two eggs into container and pour in 100ml of egg whites.

Dice the red onion, bacon and capsicum into small pieces. Roughly chop the spinach.

Lightly coat individual glass meal prep containers with olive oil.

Divide the onion, bacon, capsicum, and spinach.

Place the container in the oven and bake for 25-30 minutes, or until the eggs are set and slightly golden on top.

Let the omelette cool slightly before serving.

Store in the fridge for up to 4 days for an easy meal prep breakfast.
