Shrimp Corn Salsa Bowl

Bowl Ingredients:
- 6oz peeled & deveined raw shrimp 
- 2 tsp salt 
- 1 tsp cajun seasoning 
- 2 tsp black pepper 
- 1 tsp cayenne pepper 
- 2 tsp paprika 
- 2 tsp garlic powder 
- 1/4 avocado (optional) 
- 1/2 cucumber 
- 3/4 cup cooked white rice 
- spray oil 
- 1 romaine lettuce 
Corn Salsa:
- 2/3 cup cooked golden sweet canned corn 
- 1/2 cup red onion 
- 1/4 cup cilantro 
- 1/2 cup poblano pepper 
- juice from a lime 
- 1 tsp salt & black pepper or to taste 
Sauce:
- 1/2 cup light sour cream 
- juice from a lime 
- salt to taste 
- 2 tsp minced garlic 
- 1/2 cup of cilantro 
Directions
- Place your raw shrimp into a bowl and add in salt, Cajun seasoning, black pepper, cayenne pepper, paprika, and garlic powder. 
- Grill your shrimp in a pan coated with a light spray of spray oil until golden brown 
- To make your salsa add your cooked canned corn, diced red onions, cilantro, diced poblano peppers, juice of a lime, and salt and pepper to taste. 
- To make your sauce in a cup add your light sour cream, juice of a lime salt to taste, minced garlic, and cilantro. Blend it all together using a food processor to make your sauce. 
- Over a bed of your favorite rice, add chopped lettuce, your corn salsa, your cooked shrimp, and a drizzle of the sauce and enjoy!
