Oven-Baked Sweet Potato Fries

2 sweet potatoes (about 8 ounces each)
1 teaspoon cumin (optional)
1¼ kosher salt or coarse sea salt (optional)
¼ teaspoon cinnamon (optional)
Ground black pepper, to taste (optional)
Directions
Preheat the oven to 400°F and set the rack on the middle position. Place a wire rack on a foil-lined baking sheet.
Slice off the ends of the potatoes then microwave them for 90 seconds to make it easier to slice them. Whether to peel the potatoes or not, is up to you. But the skin adds a lot of nutritional value and as much as 60% of the potato’s fiber. On the other hand, the skin can get tough during the cooking. If you cut them by hand, first cut the potatoes in half lengthwise. Cut each half into wedges or strips (approximately 3/8 or 1/2 inch thick). Spread the fries out in a single layer on the baking sheet and spray liberally with nonstick oil spray. Sprinkle the fries evenly with any seasoning.
Bake 25 minutes for 3/8 inch fries, and 30 minutes for 1/2 inch fries. No need to flip them during cooking.
These can also be air-fried, at 380F for 12 to 13 minutes, shaking or flipping halfway through.
