THE FILLING:
4 chicken breasts, diced small
1–2 cups edamame (deshelled)
1–2 cups purple cabbage, shredded
1 red onion, thinly sliced
Green onion, chopped (for topping)
Salt, pepper, and any seasonings you like
THE KICKASS PB SAUCE:

2 tbsp peanut butter
½ cup non-fat Greek yogurt
2 tsp apple cider vinegar
¼ tsp paprika
¼ tsp cayenne pepper
2 garlic cloves, minced
2 tbsp soy sauce (no additives/preservatives)
2 tbsp water
Salt + pepper to taste
THE WRAPS:
Iceberg lettuce (for wrapping)
Directions
Make the KickAss Sauce:
Mix the peanut butter, Greek yogurt, apple cider vinegar, paprika, cayenne, garlic, soy sauce, water, salt, and pepper in a bowl until smooth. Set aside.
Cook the Chicken:
Dice the chicken breasts small. Season with salt, pepper, and your favorite spices. Cook in a skillet until done. Transfer to a large bowl.
Prep the Veggies:
Slice the cabbage, red onion, and green onion. Add the cabbage, red onion, and edamame to the bowl with the chicken.
Mix It All Together:
Pour that KickAss sauce over the chicken-veggie mix. Toss until everything is fully coated in creamy, spicy goodness.
Assemble the Wraps:
Spoon the mixture into crisp iceberg lettuce leaves. Top with chopped green onion. Wrap it up and devour.
