Sauerkraut Gnocchi and Kielbasa

Ingredients

1 (32 oz) jar Sauerkraut, (draining & rinsing is optional (don't drain if you like it tart)

2 lbs Kielbasa Smoked Sausage*, (cut in 1 1/2" rounds)

1 lg Apple, (chopped)

1 med Sweet Onion, (diced)

1 Tbsp Caraway Seeds

2 cloves Garlic, (minced)

1 cup Apple Cider, (or Apple Juice (not vinegar)

1 cup Water, (or beer (omit if NOT draining jar of sauerkraut)

1-4 Tbsp Brown Sugar (to taste)

16-20oz gnocchi (thawed or frozen)

Directions

Add the sauerkraut, kielbasa, apple, onion, caraway seeds, and garlic to the slow cooker crock. Stir.

In a separate container mix together the apple cider, water, and brown sugar. Pour over the sauerkraut mixture.

Cook on High for 4 hours, or Low for 6-7 hours.

Towards the end of the cooking time (say last 20-30 minutes), add potato gnocchi (fresh or frozen) into the crock-pot so it can heat through, absorb some of the sauerkraut/kielbasa juices, and cook without going mushy.

You might want to reduce the water/beer slightly (so the liquid isn’t too thin) since the gnocchi will absorb some liquid.

If the gnocchi cooks faster, you could switch to “keep warm” mode after they’re done.
