Chicken and Potato Bowls

Ingredients

2 lbs chicken thighs, boneless and skinless

1 bunch fresh parsley

1 bunch fresh cilantro

½ cup Pompeain extra virgin olive oil

¼ cup red wine vinegar

1 tbs minced garlic

2 tsp old bay seasoning

1 tsp salt

½ tsp red pepper flakes

Directions

make the chimichurri by adding all the listed ingredients except for the chicken into a bowl and mixing well

add the chicken into the bowl and mix well

preheat the oven to 400F, place the chicken on a wired rack, and bake for 30 min until internal temp is 165F

rest the chicken for 10 min before cutting into bite-sized pieces

Roasted Potatoes with Peppers and Onions 🥔

Ingredients:

3 large yellow potatoes, medium diced

2 bell peppers, large diced

1 red onion, large diced

2 tbs Pompeain extra virgin olive oil

1 tbs minced garlic

1 tsp old bay seasoning

1 tsp salt

Instructions:

add ingredients into a large bowl and mix well

place on a baking sheet and bake at 400F for 30 min until tender

Mango Cucumber Salad 🥭

Ingredients:

2 large mangos, small diced

1 large cucumber, small diced

1 red onion, small diced

2 tbs pompeain extra virgin olive oil

2 tbs red wine vinegar

1 tsp salt
