Ingredients

1 English cucumber, no need to peel

1-2 garlic cloves, minced (optional)

Red wine vinegar (white or apple cider work too)

2 cups plain Greek yogurt, any percent

Dill, to taste (I used freeze dried available in the produce aisle)

Directions

Use a medium bowl

Chop the garlic, if using

Grate the cucumber on a cheese grater

Use a kitchen towel or paper towels to wring the water from the grated cucumber. Do your best to dry them out or else you’ll water down the dip.

Add the yogurt, garlic and cucumber to the bowl

Add dill , pinch of salt and splash of vinegar

Mix ingredients and taste, adjust accordingly, garlic may be strong, but should mellow a bit if using full fat yogurt

Refrigerate and use as a dip
