Blueberry Oat Bars

Ingredients

1 cup Blueberries

1/4 cup Water

1 cup Oats

1 cup oat flour

1/3 cup Maple syrup

2 TBSP Coconut Oil

1/3 cup Peanut Butter

Directions

Grease a loaf tin. Over medium heat add the blueberries and water to a pan. Bring to a boil on medium high then reduce to medium low and simmer for 5-7 minutes, stirring occasionally and breaking up the berries.

Mix the remaining ingredients together in a bowl. The mixture should hold together. If too dry add more peanut butter, if too wet add more oat flour.

Press half of the mixture into the bottom of the greased pan, pressing firmly. Add blueberry compote to the top, then add the second half of the oat mixture pressing gently to cover the blueberry mixture.

Refrigerate until set.
