Sunday Gravy
3 29oz cans San Marzano whole peeled
2 cans tomato paste
Sauté meat to brown in a pan. Halfway through after first batch, cook 1 can tomato paste 1 can water in pan with meat drippings. Pour into large pot. Do this process x2
Hard part is straining tomatoes. Strainer over pot. Pour some tomatoes in and crush them (PoPop used curved bottom glass) Get all liquid out and toss all tomato pulp and seeds (should be pretty dry). Do this will all three cans. Dad uses food mill for this process
Add meat
Add couple tablespoons dried basil
Could tablespoons dried oregano
1/3 cup Parm cheese
Cup of red wine if you have it
Simmer it for about 5 hours
Fat from meat rises to the surface - skim fat off with big spoon
Could add spoosh of garlic
With leftovers could add olives, capers, garlic, red pepper, julienned pepperonis for a puttanesca
