Cowboy Butter Cajun Chicken Quesadilla Melts with Spicy Jala

Ingredients

For the Cowboy Butter Cajun Chicken:

1 ½ lbs chicken breasts or thighs, sliced thin

1 tablespoon olive oil

1 teaspoon Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

4 tablespoons butter

3 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon chopped parsley

½ teaspoon red pepper flakes (optional)

For the Quesadilla Melts:

6 large flour tortillas

2 cups shredded Monterey Jack

1 cup shredded cheddar

½ cup mozzarella (optional for extra melt)

¼ cup sliced green onions

2 tablespoons butter for toasting

For the Spicy Jalapeño Cream Sauce:

½ cup sour cream

½ cup ranch dressing

1 fresh jalapeño, minced (remove seeds for less heat)

1 tablespoon lime juice

½ teaspoon garlic powder

½ teaspoon paprika

Pinch of salt & pepper

Optional Garnishes:

Fresh cilantro

Extra jalapeños

Cowboy butter drizzle on top

Directions

Cook the Cajun Chicken:

Heat olive oil in a skillet over medium-high heat. Add chicken, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper.

Cook 6–7 minutes until golden and fully cooked.

Add Cowboy Butter:

Reduce heat. Add butter, garlic, lemon juice, parsley, and red pepper flakes.

Toss until chicken is buttery, glossy, and well coated.

Make the Spicy Jalapeño Cream Sauce:

In a bowl, mix sour cream, ranch, jalapeño, lime juice, garlic powder, paprika, salt, and pepper.

Chill until serving.

Assemble the Quesadilla Melts:

Heat a clean skillet over medium heat with a little butter.

Place tortilla down, add generous amounts of cheese, cowboy butter chicken, green onions, and more cheese.

Top with another tortilla or fold in half.

Toast:

Cook 3–4 minutes per side until tortillas are golden and cheese fully melted.

Serve:

Slice into wedges and serve with spicy jalapeño cream sauce.
