Swiss Cream Of Potato Soup

Ingredients

6 medium potatoes, peeled & cut 1/4” pieces.

6 slices bacon, cut 1/4” pieces

1/2 cup chopped onion

1 Tablespoon salt

1/2 teaspoon nutmeg

1/4 teaspoon dry mustard

1 teaspoon Worcestershire sauce

2 cups milk

1 cup Heavy cream

1 cup (4 oz) shredded Swiss cheese

2-3 sliced bacon cut into to pieces for topping (optional)

Directions

  1. cooked potatoes in boiling water until tender about 20 minutes.

  2. In a medium sauce pan cook, bacon, and onions until bacon is lightly browned.

  3. Add salt, nutmeg, dry mustard, and Worcestershire sauce to the bacon and onions.

  4. Drain and mashed potatoes and blend in milk and cream. Leave some potato chunks.

  5. Add potatoes to onion mixture. Cook over low heat until heated.

  6. Add cheese and cook until melted.

  7. Serve topped with crumbled bacon if desired.
