Boil beef soup bones or chicken bones with onions, salt, pepper and bay leaf, into a soup broth. While this is cooking, add peeled, cut potatoes, shredded cabbage and fresh beet greens, if available. When the above is almost tender, add other vegetables with their juices such as beans, peas, canned tomatoes, canned beets and if fresh beet greens are not available, add canned beet greens. May also add celery greens if desired. When all is cooked and tender, just before serving, mix in sour cream to taste and consistency desired. Remember to remove as much of the bones as possible and the bay leaf before adding the vegetables. May also be made with ham bones - each type of meat base will give your Borscht a slightly different flavor. The beets will give the soup its red appearance, the sour cream and cabbage is what makes the soup special to the family.
