Chicken Pot Pie Orzo

4 tbsp butter
2 tbsp olive oil
1/2 tbsp each fresh chopped: thyme, rosemary and sage
6 cloves garlic, minced
1 1/2 cups chopped carrots
1 cup chopped celery
1 1/2 cups frozen peas
1 1/2 cups uncooked orzo
3 cups chicken broth
1 1/2 cups shredded rotisserie chicken
1 1/2 cups milk
1 package boursin cheese
Fresh parm and puff pastry biscuits for serving
Directions
Melt butter and olive oil over medium high heat. Saute onion and a pinch of salt for about 5 minutes. Add garlic and veggies and cook for a few more minutes. Stir in orzo and cook for couple more minutes to toast. Stir in the broth and bring to a simmer. Cover ane cook for 6-8 minutes. Stir in chciken and milk and cover and cook for 3 more minutes until milk is mostly absorbed. Add the Boursin to the center of the pan and cover and cook for a couple more minutes until it starts to melt and orzo is al dente. Stir to combine. Enjoy!
