Wilted Kale with Lemon & Garlic

Ingredients

2 Tbsp plus 2 tsp extra-virgin olive oil

2 Tbsp Iresh lemon juice

2 cloves garlic, minced

Salt and freshly ground pepper

2 bunches kale, about 2 lb (1 kg) total weight, stems removed

Directions

In a small bowl, whisk together the 2 Tbsp olive oil, lemon juice, and garlic. Add salt and pepper to taste to make a vinaigrette.

Set aside.

In a large frying pan over medium heat, warm the remaining 2 tsp olive oil. Cut the kase leaves crosswise into 1-inch (2.5-cm) strips and add to the pan. Cover and cook, stirring occasionally, until the kale wilts, 5-7 minutes. Uncover, drizzle the vinaigrette over the top, and toss. Season wth salt and pepper.

Transfer to a platter and serve right away.
