Ingredients

5 lbs chicken wings (flats and drumettes)

2½ Tbsp baking powder

1 tsp salt

Directions

Prep the wings: Pat the wings thoroughly dry with paper towels to help achieve crispy skin. Place them in a large zip-top bag.

Season the wings: Add the baking powder and salt to the bag. Seal the bag and shake until the wings are evenly coated. (Optional: Mix baking powder with your favorite BBQ rub for extra flavor.)

Preheat the smoker: Set your smoker to 250°F, using your preferred wood for smoking.

Smoke the wings: Arrange the wings directly on the smoker grates, close the lid, and smoke for 30 minutes to infuse flavor.

Increase the heat: Raise the smoker temperature to 425°F and continue cooking until the wings reach an internal temperature of 175°F. Rotate or flip as needed to ensure even cooking.

Serve: Remove from the smoker and serve immediately. Enjoy them plain, toss in your favorite BBQ rub, or coat with hot sauce for extra flavor.
