Mediterranean salad

Ingredients

1 long english cucumber (or 1 small regular cucumber, quarter the round slices

1 container cherry tomatoes, quartered

1/2 red onion sliced thinly

1/3 bunch cilantro chopped (you can sub mint, parsley, basil, or dill)

3 TBSP olive oil

1/4 cup fresh squeezed lemon juice (takes 1 large lemon or 2 small)

1/2 tsp salt and pepper. Taste and add more if desired

sprinkle on Mediterranean feta cheese to your liking

Directions

1. Chop up all the veggies and add to large mixing bowl

2. Add olive oil, lemon juice, salt, pepper, and feta. Mix all ingredients.

3. Let sit for 10-15 minutes and stir every couple of minutes. Can be served right away or thrown in the refrigerator.
