Richito's Spicy Pork

Ingredients

1 cup Zesty Italian Dressing

1 cup Coke

1 can diced jalapeños (4 oz)

1 can enchilada sauce (10 oz)

1 envelope ranch dressing

1 big pork roast 2-3 lbs

Directions

Add liquid and dry ingredients to pot. Use immersion blender to combine.

Add roast.

Pressure cook on high 40 minutes with a 10 minute natural release or 90 minutes with a 30 minute natural release if frozen. Slow cook 8 hours alternatively.

When finished cooking, shred pork. I prefer to put shredded pork in a separate clean pot.

Add fat chunks from roast to cooking liquid while meat is removed. Use immersion blender to smooth out the liquid.

Combine shredded pork and liquid. Simmer and serve.

Select mild, medium, or hot jalapeños and enchilada sauce combinations based on preference. For more heat experiment with different canned peppers like chipotle or serrano.
