Roast Chicken, Orzo, Smoked Bacon, Leeks

Yes it’s official sound the alarms we are BACK in business and kicking things off with an absolute belta of a one tray Sunday dish which is dead easy to make and doesn’t fill up your entire gaff with mountains of washing up like a Sunday roast does.
Make a bed of a couple of chopped up leeks, rosemary, sage, lemon, garlic and some chopped up sundried tomatoes (and don’t waste the delicious oil too! Then pour in half a bottle of cheap white wine whatever you’ve lying around from the weekend.
Spatchcock a chicken, rub with oil salt and pepper (or just keep it whole I don’t care, just find spatchcock cooks quicker and easier) and lay it on top of your leeks and get it in the oven for 50 mins at 180c
Take out, wrap the chicken in smoked bacon then back in the oven for 15 mins.
Take out your chick, remove the bacon, squeeze out the roasted lemon and garlic, chop it up and then and then add in with a load of orzo, a pint of chicken stock and dollop of Crème Fraîche
Back in the oven for 20 mins to cook the orzo in all that chicken juice and wine and stock n stuff (leave the chicken out to rest whilst it the orzo cooks)
And bosh you’re in business. One tray, minimal fuss, absolute whopper of a Sunday dish. Sunday scaries eliminated.
